Stuffed chicken is always a fun dish to make since you can use whatever ingredients you love the most and it will still turn out really well. This dish turned out better than I had hoped- I would just use even more types of cheese next time.
1 Tomato, Diced
1 Bell Pepper, Diced
2 Chicken Breasts
2-3 Garlic Cloves, Diced
1/2 Shredded Pizza Cheese (3 Cheeses)
1/2 Cup Shredded Parmesan
6 strips of Bacon
Italian Sausage (optional)
3 Slices of Lemon
Salt & Pepper
Preheat the oven to 350º F.
Place aluminum foil on a baking sheet, place the chicken breasts on the foil, and cut down the breast lengthwise. You can butterfly the breasts but I just cut open a “pocket” in the middle of them.
Season well with salt and pepper.
Place the diced Garlic cloves (use more or less than what I used depending on your love of garlic), Pepper and Tomato in the pockets. If you decided to use Italian sausage for a bit more heat, chop it into small pieces and add it to the pocket as well.
Add the 3 cheese blend on top and season with the Italian Spices.
For one of the breasts, I then wrapped it with the bacon strips. For the other breast, I put the slices of lemon on top.
Place aluminum foil on top, and place in the oven for 15-20 minutes.
Take it out of the oven and remove the top layer of aluminum foil. Baste the chicken with the juices that have collected and proceed to place the shredded parmesan on top. Stop yourself from taking a bite- I know it smells amazing but the chicken isn’t ready yet!!!
At this point, you can add even more ingredients like salsa, pasta sauce, etc – whatever you enjoy!
Put it back in the oven for another 15 minutes or so; this time uncovered.
Your entire home will start smelling absolutely amazing.
Remove from the oven. If the bacon isn’t cooked to your liking, put it under the broiler for a couple of minutes. Then, plate it and allow it to sit for a couple of minutes. Be sure the inside is no longer pink and that the chicken is properly cooked.
Garnish with a bit more shredded cheese and parsley, with some lemon slices on the side.
Serve with a side of veggies or rice and enjoy!
