Vegan Fudgsicles with Strawberries

On New Year’s morning 2014, I wanted my niece and family to enjoy a little treat.  I found a healthy recipe for chocolate popsicles here.

While I followed the recipe, we didn’t have large popsicle molds so I believe they were more compact which in turn gave a different texture however, everyone still really enjoyed them!  Going vegan for a few meals feels good too!

Vegan Fudgsicles with Strawberries

(Serves 6)


1 cup chocolate soy milk (I used Silk)
1/4 cup raw, unsalted cashews
1 banana
8 strawberries, sliced


  1. Place all the ingredients except for the strawberries in a blender and mix until smooth.
  2. Fill six large popsicle molds three-quarters full with the chocolate mixture. Add a tablespoon or so of sliced strawberries to each mold and fill with remaining chocolate mix.
  3. Place the sticks in the molds and freeze for several hours or until completely frozen.
